I have access to a Capspray 5 stage HVLP pump that came from a CS9900 system. We have the pump, and hoses, all I would need to use it is a spray gun. Has anyone used this system before? Could I use it for water based finish, and get excellent results? I'm 100% new to this process, so any help would be useful.

Sorry, can't help - still French polishing, but thought I'd bump this back up for others to see.

With a 5 stage turbine, you can spray pretty much anything with success. What you need to get is a quality hvlp spray gun. The Fuji XPC gun is very good, and the new Fuji T Series gun is even better. As far as I know, all hvlp guns have common hose attachments, so any hvlp gun will fit on your hose.
